Sometimes https://yt1s.com/en264 and I also use FFmeg https://sarab.me/youtube-dl-examples/ , with both of these the longer the stream, the longer it takes for you to be able to download the full stream. For a few hour stream it should only take 40-60 minutes to be able to start downloading. Now FFmeg, if something happens on stream and you feel like the VOD will be removed or privated you can quickly grab the last two hours of the stream as long as you run it right after the stream ends before it gets removed. One could always have it ready to go so all you'd need to do is run it and it'll start saving the last two hours.
